2023 Thanksgiving Turkey

The day before

  1. Make 4 batches of the brine recipe and let it cool.
  2. At night, add three turkey breasts to our stock pot with the brine and let soak overnight.

The day

  1. 6:45am – Preheat smoker
  2. 7:00am – Move turkeys from brine to smoker, set smoker to 250.
  3. 7:30am – Now that turkeys are dried off, spray with oil and add chicken rub
  4. 9:15am – 110° internal
  5. 10:00am – 130° Increased grill temp to 300°
  6. 10:50am – 150° internal
  7. 11:10 – 157° internal, turned grill temp down to 225°
  8. 11:45 – 165° internal with grill probe, 170° with instant read, pulled off grill and moved to oven to stay warm,
